Fancy 2-minute noodles

This dish has it all: juicy grilled turmeric chicken, ginger-garlic noodles and a refreshing cucumber avocado salad for that perfect crunch. It's the ultimate weeknight dinner packed with flavor and protein. You'll keep coming back to this one!

Ingredients:

Chicken:

  • ½  cup Greek yogurt
  • Zest and juice of 1 lemon
  • 2 tbsp sweet chili sauce
  • 1 tbsp freshly grated ginger
  • 1 ½ tsp grated turmeric (or 1 tbsp ground turmeric)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • Salt and pepper to taste
  • 3 chicken breasts

2-minute noodles:

  • 3 packs chicken 2-minute noodles
  • 1 cup reserved noodle water
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tbsp fresh grated ginger
  • 1 tbsp crispy chilli oil
  • ½ tsp salt 
  • 1 tbsp dark brown sugar

Cucumber avo salad:

  • 3 cucumbers, quartered and diced
  • 1 ripe avocados, cut into large chunks
  • 2 tbsp fresh lemon juice
  • 3 tbsp fresh chopped coriander
  • 1 red chili seeded and finely diced 
  • Salt and pepper to taste

Instructions:

Marinate the chicken: in a large bowl, whisk together the Greek yogurt, lime zest and juice, sweet chilli sauce, ginger, turmeric, garlic powder, paprika, cumin, coriander, salt, and pepper. Add the chicken and coat it well. Cover and refrigerate for at least 30 minutes.

Cucumber avo salad: quarter the the cucumbers lengthwise, and remove the seeded centre then cut them into small chunks. Toss them into a bowl along with the avocado chunks, lemon juice, coriander, chili, and salt. Gently mix everything together. Taste and add more salt if needed. Cover and chill until ready to serve.

Grill the chicken: turn your frying pan or griddle up to a med-high heat, add the chicken and cook for about 6-8 minutes per side. Let the chicken rest for 5 minutes before slicing.

Cook the 2-minute noodles: cook the ramen according to package instructions, I only used one sachet of chicken seasoning to 3 packets of noodles. Reserve 1 cup of noodle water and drain the rest. In the same pot, heat olive oil over medium heat and sauté garlic, ginger, brown sugar and chilli oil for  2 minutes. Remove from heat, then add the ramen, salt and some of the reserved water. Toss until the noodles are well coated, adding more water if needed.

Serve: in a large bowl add in the 2-minutes noodles and top with the sliced chicken and cucumber avo salad. Dig in and enjoy!
