Mango coconut curry

Looking for a flavour packed one-pan meal that’s equal parts sweet, savoury, and packed with protein? These chicken meatballs simmered in a creamy mango coconut sauce are the perfect weeknight dinner. Plus, there are plenty of veggies to keep things balanced!

Ingredients

meatballs:

  • 500g chicken mince
  • 1 egg
  • ¼ cup panko breadcrumbs
  • ¼ cup coriander, diced
  • ½ onion, diced
  • 1 red chili, seeded and diced
  • 1 tbsp garlic, minced
  • ½ tbsp fresh grated ginger
  • ½ tsp ground cumin
  • ½ tsp turmeric
  • ¼ tsp paprika
  • Salt and pepper, to taste
  • 1 tbsp sesame oil
  • 1 tin coconut milk
  • 1 ½ cups diced mango (thawed if using frozen)
  • 2 tbsp soy sauce
  • 1 capsicum, diced
  • 100g frozen peas
  • 2 cups white rice
  • 3 cups water

Instructions

Make the sauce: start by making the mango coconut sauce. Blend together the coconut milk, diced mango, and soy sauce until smooth, then set it aside.

Prep meatballs: in a large bowl combine the ground chicken, egg, breadcrumbs, coriander,  onion, chili, garlic, ginger, cumin, turmeric, paprika, salt, and pepper. Use your hands to mix everything then use a tablespoon to scoop and roll into meatballs.

Cook 'em up: heat a large deep pan over medium-high heat and add sesame oil. Brown the meatballs on all sides, you might need to do this in batches. Once browned, reduce the heat to medium-low, and pour in the mango coconut sauce. Cover the pan with a lid and reduce the heat to low, simmer for 20 minutes. 

Make the rice: while the meatballs are simmering add the rice and water to a saucepan, as soon as the water starts boiling, cover the pan with a lid and reduce the heat to low. Leave the water and rice to simmer for approx 12 minutes. Turn off the heat but allow the rice to sit in the pan with the lid on for another 10 minutes. 

Finish the sauce: After 20 minutes, remove the lid from the meatball pan and gently stir in the capsicum and peas. Simmer uncovered for another 5 minutes.

Serve ‘em up: serve these delicious meatballs with rice and be sure to spoon plenty of that extra sauce on top.  Enjoy! 🌶️🍴

Pro tip You can also swap the ground chicken for turkey or beef, depending on your preference!
