Teriyaki pork bowl

A quick and tasty teriyaki pork bowl with crunchy veggies, rice, and a zesty kick of lime. Ready in just about 30 minutes, it's a perfect mid-week meal that's both delicious and satisfying.

Ingredients:

  • 1 cucumber, sliced 
  • 2 cloves garlic, minced
  • 1 capsicum, chopped
  • 1 carrot, chopped
  • ½ lime, cut into wedges
  • 2 tbsp teriyaki sauce
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • 1 tsp soy sauce
  • 500g pork mince
  • sesame oil
  • 3 cups water (for the rice)
  • 2 cups Jasmine rice

Instructions:

1. Cook the rice: in a medium saucepan add water and rice and bring to a boil, as soon as you see it bubble away, add the lid and turn the heat all the way down to low and leave it for about 10 minutes. Turn off heat, leave the lid on and allow the rice to rest in the saucepan for about 10 minutes.

2. Veggie prep: while the rice is cooking, slice the cucumber, carrot, and capsicum. Heat a large frying pan over medium-high heat with a drizzle of sesame oil. Cook the capsicum and carrot for 4-5 minutes until softened then the garlic and cook for a few more minutes and then transfer to a plate. 

3. Cook the pork: in a small bowl, combine the teriyaki sauce, soy sauce, brown sugar, and fish sauce. Heat the fry pan, add another drizzle of sesame oil and cook the pork mince, breaking it up with a spoon until browned. Add the teriyaki mixture and cook for 1-2 minutes until slightly reduced. Remove from heat and stir in the veggies.

4. Serve up: serve rice into bowls, top with the teriyaki pork and veggies top with the sliced cucumber, a squeeze of lime juice and sesame seeds.

Pro Tip: Serve with fried eggs for an extra kick of protein.
